It seems like it _would_ work but it seems like the heart rate gets stuck at the last value instead of changing to 0 when the watch gets disconnected. Is it on a timer to eventually go to 0?

no there is no timer - we have planed it that way - there are a few widgets- like the RealTimeGraph which would look terrible when the user lost the signal eg.
